Have you tried cooking your food a little longer? I have also heard of venting your dutch oven to allow some of the steam to escape if you are trying to achieve a crispy crust or coating on something you are baking but have never tried it myself. I tend to start off with a few extra coals then remove some if I feel that something is browning too fast. Also depends on the weather, coals tend to burn faster and hotter on windy days.
