Dude Ranch Chicken


      This recipe for Dude Ranch Chicken from RoTel is similar to a King Ranch Chicken Casserole, only made with flour tortillas.  It couldn't be easier, just toss everything together in a large bowl and pour it in your dutch oven.  It's cheesy, fluffy, spicy and a good pot luck casserole that gets better the longer it sits.  In my 10 inch dutch oven, it baked with 10 coals in a ring around the bottom and 20 on top.  After 30 minutes it was bubbling away and ready for a final topping of cheese.  It's another good camping dish, the ingredients don't require much refrigeration and you can even mix it right in your dutch oven. 

Dude Ranch Chicken
2 1/2 cups cubed cooked chicken
2 cups shredded Cheddar cheese, divided
1 10 3/4 oz. can cream of mushroom soup
1 10 3/4 oz. can cream of celery soup
1 10 oz. can RoTel Diced Tomatoes and Green Chilies, undrained
1 4 OR 8 oz. can diced green chilies
3/4 cup sliced green onions
10 flour tortillas (8 inch), each cut into 6 triangular wedges
1 Tblsp sliced green onions for garnish

     Lightly oil or spray dutch oven.
     Combine chicken, 1 cup cheese, both soups, undrained tomatoes, green chilies and the 3/4 cup green onions in large bowl.
     Mix tortilla wedges into chicken mixture.
     Spoon mixture into prepared dutch oven.
     Bake at 350 degrees for 30 minutes or until bubbling and hot.
     Top with remaining 1 cup cheese, bake for 5 minutes or until cheese has melted.
     Let sit for 10-15 minutes before serving.
     Garnish with 1 Tblsp green onions.
     Makes 6 servings.

Mix everything together and spoon into your dutch oven

Bake at 350 degrees for 30 minutes, or until bubbling,
then top with cheese

Bake for 5 minutes more, or until cheese has melted

A good, easy pot luck entree

  4. Hi Erick, thank you for your nice comments and link to your blog. I really enjoyed reading about your first dutch oven cooking adventure and seeing the pictures of your family. The food looked great. I agree, outdoor cooking does force you to slow down and enjoy the world around you, there's a lot to be said for getting back to basics and enjoying a simpler way of life.     1. Thanks for taking the time to read and to reply. I appreciate it. I believe Blogger has a simple widget for email subscriptions but I am not sure. I use one through FeedBurner and have been really happy with it, and it is free. I completely understand the time issue, and know it was just a suggestion.   5. Tried this one tonight. Verdict: Pretty good! Of course I had to make a few slight changes--For the chicken I used a 22oz bag of Tyson's Grilled and Ready Fully Cooked Oven Roasted Diced Chicken Breast. I used a measuring cup to see about how much is was. It was a bit over 4 cups. (My taste testers said they liked the extra chicken. I did too.) Left the onions out and only used 6 tortillas rather than 10. I don't know if I could have gotten 10 tortillas in. I did use the Rotel and a 4oz can of diced green chilies (mild of course). It definitely made our mouths tingle with spiciness. Cooked in a 12" oven with 12 coals under and 26 on top. Was bubbling in about 30 minutes.

    When I make this again in the future I will probably leave the green chilies out, mix the ingredients in a large mixing bowl and use a foil lining in my oven (I mixed everything in the oven this time), and go easier on the topping cheese at the end. I think this would stand just fine without the cheese topping. (BTW-it looks like you used a cheese mix as your topping, there's orange and white cheese. At least that's what it looks like.)

  7. This would probably be a great crock pot dinner, since everything is already cooked you probably wouldn't have to cook it for very long, just until heated through and bubbling. LIddy

  8. This is a great recipe, a keeper at our house! I used more cheese and blended the tomatoes. Only because I don't like tomato chunks. I was worried that the flour tortillas would be soggy, but that was not the case. It was excellant. Thanks
