Stagecoach Chicken


     When I stumbled upon this recipe, I just knew it had to be good.  It's by far the best oven fried chicken I've ever had.  The skin is amazingly crisp and the chicken is as juicy as can be.  I would suggest preparing your chicken and setting up your assembly line before you light your coals, that way you can bread the chicken and bake it right away.  You might want to pack a pair of disposable gloves as the preparation is a bit messy.  In my 12 inch dutch oven, the chicken baked with 12 coals in a ring around the base of the oven with 28-30 briquettes on the lid.  I left it alone and in one hour it was perfectly done.  Leave the Shake and Bake at home and give this buttery, crunchy chicken a try.

Stagecoach Chicken
1 1/4 cups ranch salad dressing
1 egg, slightly beaten
7-8 pieces cut up chicken
1 cup flour
1/2 tsp salt
1/4 tsp pepper
1 1/2 cups corn flake crumbs
1/4 cup butter or margarine, melted

     Lightly oil or spray 12 inch or larger dutch oven.
     In medium bowl combine salad dressing and egg; set aside.
     Rinse chicken with water and drain well.
     In medium bowl, combine flour, salt and pepper.
     Place corn flake crumbs in separate bowl.
     Dredge chicken pieces in flour, dip in salad dressing-egg mixture then roll in corn flake crumbs.
     Place chicken pieces in single layer in prepared dutch oven.
     Drizzle with melted butter.
     Bake at 350 degrees for 50 minutes to 1 hour or until fork tender.
     Makes 4 servings.

  1. Liddy, We made this last night in the legless DO in the oven. My wife doesn't like dark meat too much so we filled the DO with boneless, skinless breasts. They turned out amazing. Crispy on the outside, juicy on the inside. We had some leftovers in the fridge, so tonight we sliced up the remaining breasts and put them over a spinach and mandarine orange salad with a little feta cheese. It was equally delicious! Thanks for putting variety into our kitchen!

  3. I broke out the 12" dutch oven to wrassle up a quick and tasty meal. Went and bought a chicken- oh my! When did chickens start costing ten bucks? After getting over that shock (and my anger at the government's fiscal policies) I cut up the fryer and followed the recipe to a 'T'. Excellent results (as is typical of any of Liddy's recipes!) family was fed and I made a delicious broth with the giblets and carcass.

  4. Third time for this recipe. Only difference is we used French fried onions instead of corn flakes. We had guests over tonight too.

    Guest 2: It is really juicy, did you brine it first?
    Me: No, just put it in the dutch oven!

  5. I have a question. I read the recipe 3 times and I'm not sure where the melted butter comes in. Are you supposed to mix the bread crumbs in it?

  9. So glad I found this recipe cannot wait to try it I live in Missouri and used to travel to Colorado for work for a few years. I found this great amazing restaurant “Stage Coach Inn,”and loved this restaurant so much. My whole team was told about and they felt same way. I would go in order the fried chicken and told them once the chicken was done and they brought the plate out to put another batch in so I could take back to hotel so I could have it the next day. They would see me come in and got to where they knew what I wanted and the service was great. I hope my wife doesn’t get upset when I make This. As it will give her recipe s run for its money.
